Turkish BBQ'd Pork Chop

2 tbsp of olive oil
1 tbsp cumin
1 ½ tsp of paprika

1 ½ tsp of cinnamon
1 tsp salt
1 tsp of curry powder


1 lb of Pork Chops


1.     Mix together first 6 ingredients and slather on pork.

2.    Marinade them for 2-24 hours.

3.    Preheat BBQ on high heat

4.    Reduce heat to medium high.

5.    Grill for 4-6 minutes on each side depending on thickness.

6.    Make sure that chops are no longer pink and that juices run clear.

7.    Let sit for about 5 minutes before serving

Pizza Stromboli

Pizza Dough (bread maker) divided in 8 (takes 2 hours to make)
2 tbsp of melted butter or margarine (optional)


Stromboli ingredients

½ - 2/3 cup tomato sauce (pasta sauce or herbed tomato paste)
3 cups pizza cheese (Mozzarella blend) grated
Your favorite pizza ingredients
 

1.     Preheat oven to 450 degrees Fahrenheit.

2.    Roll out all 8 section of pizza dough on a floured surface.

3.    Put 1-2 tbsp of tomato sauce on half the dough.

4.    Add your favorite ingredients to the sauced half.

5.    Add 1/3 of a cup of grated cheese on the same half.

6.    Fold un-sauced half over your ingredient half.

7.    Press edges together and crimp with fork.

8.    Optional: Brush top with melted butter.

      9.  Bake on a pizza pan or cookie sheet for 25-30 minutes.

Cajun Garlic Potato Pancakes

3 cups of grated potato or sweet potato
2 cloves of garlic, crushed
1 tsp of cajun seasoning (we use Hyes of Canada)
¼ tsp of salt
1 egg
¼ cup of flour
2-3 tbsp of oil


1.     Squeeze liquid out of potatoes

2.    Heat 2 tbsp of oil at med high heat in a very large flat pan.

3.    Mix potatoes, garlic, Cajun seasoning, salt, egg and flour together.

4.    Using ice cream scoop, scoop out potato mixture into the hot pan and flatten into a pancake. (3-4 pancakes usually can be cooked at a time)

5.    Cook on each side for 2-3 minutes or until golden brown.

6.    Once cooked remove to a plate lined with paper towel to drain excess oil. Can be kept in an oven on 180-200 degrees Fahrenheit to keep warm.

7.    You may need to add more oil after cooking 2 pans of pancakes.

8.    Makes about 8-10 pancakes

What's in the Pantry Crockpot Chili

2 lbs of lean ground beef
½-1 tbsp of chili powder
1 tbsp of cumin
1 ½ cups of salsa
1 sweet pepper, chopped
1 can of black beans, rinsed
½ cup of frozen corn


1.     Brown ground beef with chili powder and cumin at medium- high heat and place in Crockpot.

2.    Add all remaining ingredients and cook on low for 6-9 hours or high for 3-5 hours.

Korean Beef Stir Fry

1 pound of stir fry beef or steak cut into thin slices

1/4 cup of liquid honey
1/3 cup of soy sauce
1/2 tsp of pepper
1 tbsp of grated ginger
2 tbsp of dark sesame oil


1 tbsp of cornstarch

½ cup of baby bok choy, chopped
1 cup of broccoli, into florets
1 green onion, chopped
1 sweet pepper, sliced thin
1 tsp of sesame seeds



1.     Combine honey, soy sauce, pepper, sesame oil and ginger in a bowl. 

2.    Take half and pour on beef and marinade for 1-8 hours.

3.    Remove 1-2 tbsp from reserved marinade and place in small bowl or ramekin and whisk in cornstarch with a fork.  Set both aside.

4.    Heat oil on medium high heat in wok or large pan.  Add beef and cook until no longer pink.

5.    Add broccoli and cook until almost done.

6.    Add peppers and bok choy and cook for about 2 minutes.

7.    Pour in sauce and bring to almost a boil.

8.    Reduce heat to medium and whisk in cornstarch and sauce mixture.  Cook and stirring until sauce is thickened.

9.    Toss in green onions and sesame seeds.

10. Serve on rice or noodles.

Crockpot Tex-Mex Meatloaf

2 lbs of ground beef, lean
1 egg, beaten
½ cup of salsa (your favorite)
½ cup of bread crumbs
1 tsp of chili powder
1 tsp of oregano
2 tsp of garlic powder
½ cup of grated zucchini
Pepper to taste



1.     Mix all ingredients in a bowl and form into a short log

2.    Place in Crockpot and cook on low for 6-8 hours.

Lentil, Cauliflower & Tomato Curry

½ cup of red lentils prepared according to package instructions
½ cup of sweet onion diced
2 cups of cauliflower, cut up into florets
1 cup of cherry tomatoes, halved
1 tbsp of curry paste
2 tsp of curry powder
½ tsp of cumin
1 tsp of salt
1 clove of garlic, crushed
1 tsp of grated ginger
¼ cup of water
2 tbsp of yogurt, plain
1 tbsp of oil



1.     Preheat oil in large skillet or wok to medium high heat.

2.    Cook onions until soft then adding curry paste, curry powder, cumin, salt, garlic, and ginger.

3.    Add water, cauliflower and tomatoes, and cover with lid; cook until cauliflower is done.

4.    Add lentils and cook for 5-10 minutes uncovered

5.    Stir in yogurt and heat through.

6.    Serve with Grilled Garlic Naan.
