Crockpot Creamy Pork & Black Bean Soup with Green Chilies


2 lbs. lean ground pork 1 can black beans, rinsed 4 cups sodium reduced chicken broth 4 oz. can of chopped green chilies 1 cup corn 1 cup chopped celery 1 tbsp. cumin 4 oz. light cream cheese 5 cloves of garlic, chopped Salt and pepper to taste 1. Optional. Brown ground pork with chopped garlic 2. Add all ingredients to crockpot except cream cheese 3. Cook 6-8 hours on low or 3-5 hours on high 4. 30 minutes before serving stir in cream cheese until melted and mixed. 5. Serve with sour cream, chopped green onions and/or grated cheese.

Crockpot Beef, Beans and Tomato Soup


1.5lbs beef stew meat
1 can of black beans
796ml can of diced tomato
4 cups broth
2 tsp dried herbs
2 tsp paprika
2 tsp salt
2 tsp garlic powder
2 tsp onion powder
2 cups diced carrots
2 cups diced celery
1 cup diced mushrooms
4 cups of water

    1. Place all ingredients into Crockpot.

    2. Cook on low for 8-10 hours or high for 4-6 hours

Crockpot Ground Chicken and Vegetable Soup

2 lbs of ground lean chicken
1 cup of chopped carrots
1 cup of chopped celery
½ cup of chopped onion
2 tsp of garlic powder
1 tsp of basil
1 tsp of oregano
1 tsp of thyme
½ tsp of dill
Salt and pepper to taste
6 cups of low sodium chicken or vegetable broth

 
1.     Season chicken with salt and pepper and brown in a medium-high pan

2.    Once browned add all ingredients including the chicken into the Crockpot

3.    Cool on low for 7-9 hours or on high for 4-6 hours.

Crockpot Ranch Taco Soup with Chicken Meatballs

Ranch Seasoning (Click for recipe)
1 can of diced tomatoes
1 can of black beans rinsed
1 tbsp of chili powder
1 tsp of cumin
1 tsp of oregano
½ cup of frozen corn
1 small zucchini chopped
½ cup of sweet onion, chopped
1 sweet pepper chopped
4 cups of low sodium chicken broth

Mexican Chicken Meatballs (click for Recipe)
1.     Make chicken meatballs the night before.

2.    Place all ingredients into Crockpot.

3.    Cook on low for 6-8 hour or high for 2-4 hours

Crockpot Ham and Lentil Soup

1 and ¼ cup of red lentils
3 stalks of celery chopped
2/3 cup of carrots chopped
½ of sweet onion chopped
2 cups diced cooked ham

1 tsp of garlic powder
½ teaspoon of basil
¼ teaspoon of thyme
½ teaspoon of oregano
¼ teaspoon of black pepper
32 ounces of water

1 chicken bouillon (We use Harvest Sun bouillon)*

 *you can replace 2 cups of the water and bouillon for 2 cups of low sodium chicken broth.


1. Dissolve bouillon in about 1 cup of hot water.

2. Add to Crockpot along with all the remaining ingredients.

3. Cook on low for 8-10 hours or high for 5-7 hours.
