Swiss Chard, Fennel & Mushroom with Bacon

4 cups of swiss chard, chopped & separate stems from greens
1/2 - 1/3 cup of sliced mushrooms
1/2 – 1/3 cup of thinly sliced fennel bulb
2 cloves of garlic, crushed
4 slices of bacon

1.     In a large pan, fry bacon on medium heat until almost crispy.  Remove bacon to a paper towel & drain.
2.    Add garlic to pan: stir and cook for 1 minute. (if needed add some oil or butter to the pan)
3.    Add chard stems, fennel and mushrooms.  Cook covered with a lid & occasionally stir until fennel & chard are soft.  About 10 minutes.
4.    Crumble bacon.
5.   
Add chard leaves & bacon and toss until leaves are wilted.

Yogurt Ranch Coleslaw Dressing

1/3 cup of plain greek yogurt
2 tbsp of seasoned rice wine vinegar
2 tsp of raw cane sugar
1 tsp of dijon mustard
1 tsp of ranch seasoning

1. Mix ingredients together and stir into your slaw. Let refrigerate for 1-4 hours.

Lemon Dill Cheesy Breadsticks

1 ¼ cups on unbleached white flour PLUS approx. ¼ cup
1 tsp of honey
1 ½ tsp baking powder
½ tsp salt

2 tsp of Epicure’s Lemon Dilly Dip Mix
½ cup of grated cheddar
cup milk
2 tbsp of olive oil


1.     Preheat oven to 450 degrees

2.    Combine first 6 ingredients and stir

3.    Add milk to form a soft dough

4.    Gently knead on a floured surface adding more flour if needed

5.    Shape into a flat rectangle and cut into sticks. (Makes about 10)

6.    Place on a lined cookie sheet and brush with oil

7.    Bake for 12-14 minutes

Sausage and Bread Stuffing

4 cups of cubed dried bread (used Stuffing Bread)
½ pound of pork sausage (no casing)
3/4 cup of onions chopped
3/4 cup of celery chopped
1/4 cup of butter or margarine
½ tsp of poultry seasoning
1 tsp of thyme
½ tsp of salt
Pepper to taste
1 tsp of celery seed
½ cup of chicken broth


1.     Brown sausage in a medium-high large pan.

2.    Once sausage is browned turn down heat to medium and add onions, celery and butter.

3.    Cook for about 10 minutes until celery and onions are soft.

4.    Add poultry seasoning, thyme, salt, pepper, celery seed and both. 

5.    Heat through and then pour mixture over bread cubes in a large bowl.

6.    Stir and then stuff in turkey OR place in a baking dish and cook for 30 minutes at 375 degrees.

Easy Crockpot Potatoes Gratin

3 ½ cups of potatoes sliced thin
½ cup of sweet onions sliced
1 can of evaporated milk
1 cup of grated cheddar cheese
2 tsp of dried thyme
1 tsp of powdered garlic
¼ tsp of paprika
¼ tsp of salt
Fresh pepper to taste
½ tsp of mustard

 
1.     Mix milk, cheese thyme, garlic, paprika, salt, pepper, and mustard together

2.    Place slice potatoes and onions in a medium size Crockpot and pour milk mixture over top.

3.    Cook on high for 5 hours or on low for 8-10 hours.

Cajun Garlic Potato Pancakes

3 cups of grated potato or sweet potato
2 cloves of garlic, crushed
1 tsp of cajun seasoning (we use Hyes of Canada)
¼ tsp of salt
1 egg
¼ cup of flour
2-3 tbsp of oil


1.     Squeeze liquid out of potatoes

2.    Heat 2 tbsp of oil at med high heat in a very large flat pan.

3.    Mix potatoes, garlic, Cajun seasoning, salt, egg and flour together.

4.    Using ice cream scoop, scoop out potato mixture into the hot pan and flatten into a pancake. (3-4 pancakes usually can be cooked at a time)

5.    Cook on each side for 2-3 minutes or until golden brown.

6.    Once cooked remove to a plate lined with paper towel to drain excess oil. Can be kept in an oven on 180-200 degrees Fahrenheit to keep warm.

7.    You may need to add more oil after cooking 2 pans of pancakes.

8.    Makes about 8-10 pancakes
