Chicken Coconut Makhani

2 tbsp of butter or gee or margarine
1 pound of chicken sliced
1/2 of sweet onion
2/3 cup of yogurt (we use Olympia 2%)
1/2 cup of ground almonds
1/2 tsp of red pepper flaked
1/2 tsp of turmeric
1/4 tsp of cloves
1/4 tsp of cardamom
1/4 tsp of cinnamon
1/2 tsp of black pepper
1/4 tsp of cumin
1 tbsp of ginger, grated
1 clove of garlic, crushed
1 can of coconut milk
1 can of crushed tomatoes


1.  Heat pan to medium high and melt butter,  add onions and cook until soft
2.  Add chicken cook until no longer pink
3.  Add yogurt, almond, spices, ginger, garlic, and crushed tomatoes
4.  Bring to a boil and reduce heat to medium heat. Simmer for about 10-15 minutes
5.  Add coconut milk and heat through
6.  Serve over rice or noodles.

Cream Cheese "Butter" Chicken

3 chicken breasts, chopped into chunks
1 tbsp of grated ginger
½ onion, chopped
2 tbsp of tomato paste
1 tsp of brown sugar
1 tsp of cumin, ground
1 tsp of turmeric
¼ tsp of chili pepper flakes

¼ tsp of ground cardamom,
¼ tsp of ground cinnamon,
½ tsp of black pepper
4 oz of cream cheese
2/3 cup of broth
1 tbsp of oil



1.     Preheat oil on medium-high in a large pan. 

2.    Add onions and ginger.  Cook until onions are soft

3.    Mix together cumin, turmeric, chili pepper flakes, cardamom, cinnamon and pepper.  Stir into onions and ginger.

4.    Add tomato paste and cook for 1-2 minutes.

5.    Add chicken and coat with mixture.  Cook for 5 minutes.

6.    Add brown sugar, cream cheese and broth and stir until cream cheese is melted in.

7.    Cook for another 10-15 minutes until sauce has thickened up and chicken is cooked through.

Lentil, Cauliflower & Tomato Curry

½ cup of red lentils prepared according to package instructions
½ cup of sweet onion diced
2 cups of cauliflower, cut up into florets
1 cup of cherry tomatoes, halved
1 tbsp of curry paste
2 tsp of curry powder
½ tsp of cumin
1 tsp of salt
1 clove of garlic, crushed
1 tsp of grated ginger
¼ cup of water
2 tbsp of yogurt, plain
1 tbsp of oil



1.     Preheat oil in large skillet or wok to medium high heat.

2.    Cook onions until soft then adding curry paste, curry powder, cumin, salt, garlic, and ginger.

3.    Add water, cauliflower and tomatoes, and cover with lid; cook until cauliflower is done.

4.    Add lentils and cook for 5-10 minutes uncovered

5.    Stir in yogurt and heat through.

6.    Serve with Grilled Garlic Naan.

Grilled Garlic Naan (Bread Maker)

1 cup of warm water
2 tbsp of sugar
1 tsp of salt
2 cloves of garlic, crushed
2 ½ cups of unbleached white flour
1 tsp of bread maker yeast

½ cup of butter or margarine, melted


1.     Place first 6 ingredients in this order in your bread maker OR the order recommended by the makers of your maker.

2.    Put maker on dough setting and press start.  It takes about 2 hours to make.

3.    Punch down dough on a floured surface and break into approximately 12-15 golf ball size balls.

4.    Place on a tray and cover with damp towel to rise for 30 minutes.

5.    Preheat BBQ or cast iron pan on medium high heat

6.    On floured surface roll out dough into thin circles.

7.    Brush dough with melted butter and cook on each side for 2-3 minutes.

8.    Keep Naan warm by placing on top rack of BBQ or in a 200 degree f oven.
